Shake noodles are beef-flavored noodle dishes typical of the city of Bandung, West Java. This dish consists of yellow noodles served in thick beef broth, sliced kikil (beef leg tendons), bean sprouts, meatballs, lime, and sprinkled with celery slices, leeks, and fried onions. Some recipes might add beef tripe.
The term shake in the name of this dish refers to the cooking process, which is to shake the noodles in a metal container with a handle, while dipping it in hot water.
To add flavor, you can also add sweet soy sauce and chili sauce. A dish that is similar but somewhat different from the city of Cirebon is called koclok noodles.
